This document provides a biography of Auguste Escoffier in conjunction with an abridged institutional history of the Les Amis d’Escoffier Society and Foundation, annotated by LeRoy Neiman. At the bottom of the first page, the artist describes a sidewalk cafe at night; the second page is ornamented with an illustration of a chef. The document was most likely produced in preparation for the artist’s memoir, All Told.
